Harvest Salad

I enjoyed my first harvest today. A little harvest. Fittingly. It’s been four weeks since I finished planting our smallest little garden, and I am amazed at how much bigger everything is. The plants are flourishing. Thriving. Thank you sunshine!

It has become my morning routine to check on the little garden at the side of my house. Assess the progress. Water if needed. Mound the soil around the potato stems. Weed. Inspect. Play in the dirt. Sniff the basil.

Rather spontaneously, I picked a bunch of green lettuce and purple kale this morning. Small clusters, still young. The leafy greens were getting quite crowded in their pots. I also ‘thinned’ out some carrots (the tiny seeds are hard to space out so it’s suggested to ‘thin’ the growth later). I ended up with a nice serving of vegetables for lunch.

Tossed with farro, crumbled feta, toasted walnuts and a vinaigrette, it was a tasty and satisfying lunch. And gratifying to have watched the seedlings grow.

As an added bonus, the garden greenery creates a more welcoming space on the side of my house. I did not tend to linger in the area before. Now it’s the perfect spot to pull up a chair and eat my harvest salad.
