Potato leek soup

My husband and I hosted Thanksgiving dinner at our house. Roast chicken, potato and celeriac purée and a medley of colourful roasted vegetables. My brother and sister-in-law made the trek from Ottawa with my two nieces and nephew. My daughter was home from university. The grandmothers were happy all kids and grandkids were present. Eleven family members packed around our table. 

We all had many things to be thankful for as we went around the table: family, friends, health, peace, homes safe from hurricanes and tornadoes, good food, a week off school, swimming, donuts, molasses Halloween candy. It was a good long list.

After dinner we played the game Listography. Essentially you are given a category and you write down a list of things that fall in this category. Things in your fridge, spices, things people are afraid of, ice cream flavours, twelve days of Christmas…

…soups.

We had to list three types of soups. We ALL wrote chicken noodle and tomato. Classics. The third choice varied – minestrone, squash, broccoli – but the most common was leek and potato. So when I saw a big bundle of Ontario leeks at Farm Boy today I grabbed them. The air was nippy. Soup season had arrived. Potato leek has to be the easiest soup to make.

Leeks.  Potatoes. Water. Just make sure you clean the leeks!

Simple.

A comforting soup to keep on the list. I am thankful for the idea to whir up a batch. And most thankful for my family around the table this Thanksgiving.
